Xylitol is a sakcharoalkoole found in small quantities in fruits and vegetables. The NOW Xylitol is derived from genetically non-standard corn. It resembles sugar in consistency and taste but has fewer calories and is ideal for diabetics.
Unlike sugar, xylitol is absorbed slowly, so it causes a rapid increase in blood sugar. It offers 40% fewer calories, ie 2.4 calories per gram, compared to 4 calories of sugar, while providing approximately the same sweetness as sugar with a cool sensation.
